Weeknight Chicken Enchilada Soup

Happy sunny Sunday from Albuquerque! Sorry for being away for a while! I promise I'm back for the next few days!

Today I have a great weeknight recipe adapted from this find on Pinterest. I know it's getting to be the last few weeks of soup weather, but this is tasty cold or warm!

Weeknight Chicken Enchilada Soup

Ingredients:
1 rotisserie chicken;
1 can {low sodium} chicken broth;
2 T {low sodium} taco seasoning;
1 can cream of chicken soup;
1 can {no salt added} diced tomatoes;
1 can {no salt added} black beans;
1 can {no salt added} whole kernel corn;
1 can diced green chiles (or New Mexico green chiles, yum!)

Directions:
1. Combine chicken broth, cream of chicken soup, and taco seasoning in a soup pot on medium heat. Whisk until blended, and let simmer.
2. While the pot is simmering, pull apart about 2/3 of the rotisserie chicken (just eye how much you want) and shred it to "soup size." This can be done ahead of time to save time during the week.
3. Add the shredded chicken to the pot and stir.
4. Drain the canned corn (I do this because I don't really like canned corn).
5. Add the drained corn to the pot.
6. Add the tomatoes, black beans, and green chiles to the pot (all with their juices).
7. Mix well, and simmer on medium for about 20 minutes stirring frequently. Basically you are warming all of the canned ingredients and letting the flavors meld together.
8. Serve and enjoy! 

This soup is good with sour cream, shredded cheese, tortilla chips, flour tortilla, and sliced avocado as garnishment!
