Juicy Lucia - Recipe

I've been lucky enough to work and live in some very different areas of the country. One thing I've noticed in the places I've lived is that each has their own food-lore (kind of like folklore) and local foods that you cannot find anywhere else (or so the drumbeat says). In Montana it's huckleberries, in Iowa it's corn, in the Twin Cities it's the folklore of the Juicy (or Jucy) Lucy and in New Mexico it's the green chile. It is the last two, though, that I've put together to create a new dish all my own: Juicy Lucia!

While there is a long history of dispute regarding the origins of the Juicy (or Jucy) Lucy (JL), when it comes right down to it, it's a great food. Basically, a JL is a cheese stuffed burger or inside out cheeseburger. It is greasy, messy, and most importantly delicious!

When Morgan and I visited my mom in May, I was sure to take him to one of the "original" JL bars so we could both experience the JL as it was intended. Bare, served with a heaping serving of french fries to share. So when we came back to New Mexico, we knew we were going to recreate this... the New Mexican way... with green chile!

What You Need:
Ground Beef (or chicken or turkey)
Seasoning for your meat
Sharp Cheddar Cheese (not American, it will melt too quickly)
Green Chiles ( if you have access to fresh or frozen that's best, but canned will work)
Buns
Condiments (optional)

What To Do:
1. Prep your grill (we used a George Foreman grill);
2. Season your meat;
3. Prep your green chiles by cutting off the top and using the back of a knife to push out the seeds;
4. Chop your prepped green chiles; 
5. Grate your cheddar cheese (not American because it will melt away before the burger is grilled);

6. Measure out 3 oz (or a large golf ball) of meat per patty (two patties per burger);
7. Form each patty on a piece of plastic wrap;
8. Pile on in a thin layer the grated cheese and top with the chopped green chile (just eye the amounts);
9. Fold over the plastic wrap and put the top patty on the cheesed patty;
10. Carefully seal the edges of the burger so the cheese won't ooze out;

11. Transfer the patty onto the prepped grill (if you are using a George Foreman, do not close the lid, it will push out the cheese);
12. Cook the burger until it is fully cooked, being careful when flipping the burger;

13. Let the burger sit for a few minutes before eating as the cheese will be extremely hot.

If you are trying to watch your waistline or just don't like ground beef, you can make your Juicy Lucia with ground turkey like I did!
